BEN, ‘Ölsem de iki yasına kadar şeker vermem’ türü annelerdenim sevgili okur. Sofra sekerinin insana yararlı degil zararlı bir yiyecek oldugu günümüzde artık herkesin kabul ettigi bir gerçek. Elbette ben de zaman zaman çikolata gibi tatlıların esiri oluyorum ama genel olarak ‘Ne yiyorsan osun’ mantıgı hayatımda önemli bir yer tutuyor.

Çocuklara ek gıda vermeye basladıgımızda önce “Seker yerine bal kullanırım,” diye düsünmüstüm. Ancak çocukların doktoru uyardı, “Bir yasından önce bal yasak,” diye. Simdi 16 aylıklar ve artık bu faydalı besini yiyebiliyorlar. Fakat benim aklımda kalmıstı, neden bir yasından önce bal yiyemiyorlar, merak ediyordum. Onu da geçtigimiz günlerde tanıstıgım, Ari Gıda Laboratuarı Genel Müdürü Gıda Mühendisi Burcu Sezen’den ögrendim.

ZEHİRLENMEYE NEDEN OLABİLİR

Efendim, mesele suymus: Arılar bal yapmak için nektar toplarken botulizm bakteri sporlarını da beraber alıp farkında olmadan bal yapımında kullanabilirlermis. Yetiskinlerde bu balın yenmesi sorun yaratmıyormus. Bebeklerde ise hem vücudun savunma ve sindirim sistemleri yeterince gelismemis hem de mide hâlâ ancak anne sütünü hazmedebilecek durumda oldugundan, bu bakteri, bir yasından küçüklerde botulizm adı verilen tehlikeli bir zehirlenmeye neden olabilirmis.

Bu arada hemen belirteyim, bir yasından sonra böyle bir sorun olmadıgı gibi, annenin hamilelik ve emzirme döneminde bal tüketmesinde de bir sakınca yok. Burcu Sezen, ‘mucize gıda’ olarak bilinen balın çocuklar için çok yararlı bir besin maddesi oldugunu söylüyor. Annelerin ‘gerçek bal-sahte bal’ çeliskisinden bahsedince de, “Sahte bal tuzagına düsmemek için mutlaka markalı bal alın. Çünkü iyi bir markanın balları, çok sayıda teste tabi tutulduktan sonra ambalajlanır” diyor. Kendisinden, bal tüketimiyle ilgili söyle bilgiler de aldım…

GELİŞİM İÇİN FAYDALI ?

Vitamin, mineral, aminoasit, enzimler gibi pek çok yasamsal maddeyi içeren bal, sindirimi kolaylastırması, iştah açması ve gelisme bozukluklarında vücudun toparlanmasına yardımcı olması nedeniyle çocuk beslenmesinin vazgeçilmezidir.

Çam balı yüksek mineral içerdigi için, çocuklarda demir eksikliginin giderilmesine katkı sağlar. Balın içerdigi magnezyum, damarlarda kanın pıhtılasmasını önler ve stresin olumsuz etkilerinden korur.

Okul döneminde çocukların algılarını açık tutmalarına yardımcı olur. Kabızlıgın önlenmesinde yardımcı olur. Balın süt ve süt ürünleriyle karıstırılması öksürükle bogaz hastalıklarına karsı bilinen en eski korunma yöntemlerinden biridir.

20-25 kilo olan bir çocugun, günde 20-25 gram, yaklasık iki-üç tatlı kasıgı bal tüketmesi gelisimi için büyük fayda sağlar. Dogal balın kristallesmesi (sekerlenmesi) olagandır. Balı, 45 derece su içerisinde kavanozuyla birlikte ısıttıgınızda eski haline geri döner. Avrupa’da ve ABD’de, çocuklara balı sevdirmek, bala sofrada kullanım kolaylıgı saglamak amacıyla süzme baldan gelistirilen krem bal kullanılıyor. Türkiye’de de bu bal üretilmeye başlandı.
